Roy Choi is a Korean American chef who would become popular for his gourmet Korean Mexican taco truck, Kogi. He is a chef that is not celebrated for the most luxurious and fanciest foods, but for creating food that is deliberately not fancy, but tastes amazing. He is one of the founders of the food truck movement and he has become a major face in the culinary world today.
Born in Seoul, Roy Choi would eventually make his way to Los Angeles and Southern California where he was raised. He would see his parents work as business owners in several different areas, and he would become interested in restaurants because of his parents. In his university years, he would attend the California State University, Fullerton and graduate with his degree in psychology. However, he would become obsessed with some of Emeril Lagasse’s work and eventually enroll in culinary school.
Today, he is known as one of the best chefs in the world. He was named one of the “Best New Chefs” in 2010 by Food and Wine magazine. He was the first food truck owner to earn this distinction. He would also be the inspiration for the Jon Favreau movie, Chef. Later, they would collaborate and create The Chef Show, featured on Netflix today.
